Leek and bacon flan

Ingredients

Method

1.Preheat oven to 180°C/160°C fan forced. Lightly grease a 4.5cm-deep 24cm (base diameter) round pie dish.
2.Heat oil in a medium frying pan over moderate heat. Add leek bacon and garlic: cook and stir for 4-5 minutes or until leek has softened.
3.Bring a medium saucepan of water to the boil over moderate heat. Add broccoli; cook for 2 minutes. Drain: place in prepared dish. Top with leek mixture.
4.Whisk eggs, milk and cheese in a large jug. Season with pepper.
5.Pour egg mixture over broccoli. Bake for 15 minutes.
6.Reduce oven temperature to 170°C/150°C fan forced. Bake for 15 minutes more or until set at center.
7.Remove from oven. Stand in pan for 5 minutes. Cut into wedges. Serve with salad and garlic bread.

Enjoy leftovers cold. You con use white onions instead of leeks if liked.
