Method

1.In a serving bowl, combine olives, peas, mesclun, celery and herbs.
2.Make dressing by whisking together olive oil, lemon juice and the herbs de provence in a small jug. Season to taste. Drizzle dressing over salad just before serving. Toss well.

Herbs de provence is a dried herb and spice mixture available from most supermarkets and delis.
