Flour-dipped fish with kumara wedges

Method

1.Preheat oven to 200C. Place kumara and oil in a baking dish and sprinkle with salt. Bake for 15 to 20 minutes or until cooked and golden, turning wedges during cooking time.
2.Cut fish fillets into long pieces. Mix rice flour, lemon juice and soda water together until ingredients form a smooth batter.
3.Dip each fish fillet into batter. Add to hot oil and fry until cooked through and golden. Stir batter before adding each fish fillet.
4.Serve fish and kumara wedges with salad and tartare sauce.
