Method

1.In a jug, combine water, yeast and 1/2 teaspoon sugar. Cover and set aside in a warm place 5 minutes, until foamy.
2.Sift flour and spice together into a large bowl. Stir in remaining sugar. Make a well in the centre. Add yeast mixture, milk and butter. Using a wooden spoon, mix to a soft dough.
3.Turn out onto a lightly floured board. Knead 8-10 minutes, until smooth. Place in a lightly oiled bowl. Cover with clean tea towel. Set aside in a warm place until doubled in size (about 1 hour).
4.Preheat oven to very hot, 220°C. Lightly grease an oven tray.
5.Punch dough down with your fist to release gas. Divide into 16 even portions and knead into balls.
6.Arrange balls close together on tray. Cover and set aside in a warm place 10 minutes, or until slightly risen.
7.Brush buns with yolk mixture. Bake 10 minutes.
8.Reduce oven to 180°C. Bake 20-25 minutes, until buns are golden, risen and sound hollow when tapped. Transfer to a wire rack to cool completely.
9.Make a small cut in the top of each bun. Pipe in cream (see note) and finish with a dollop of jam.

To make mock cream, cream 125g butter 1/3 cup icing sugar together in a bowl, then beat in 1 tablespoon each of tick and boiling water and 1 teaspoon vanilla extract.
