Salmon with salsa verde

  • 2 cups parsley, finely chopped
  • 1/4 cup roughly chopped gherkins
  • 2 tbsp baby capers
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • finely grated rind of 1 lemon
  • 1 clove garlic, finely crushed
  • 4 salmon fillets
  • steamed greens, to serve


Salmon with salsa verde

  1. Make salsa verde by combining parsley, gherkins, capers, oil, lemon rind, juice and garlic in a bowl using a fork. Season to taste.
  2. Heat a non-stick frying pan on high. Add salmon, skin side down, and cook, 2-3 minutes each side, until cooked to your liking. Serve with salsa verde and steamed greens, if you like.
