Rhubarb chutney, rhubarb recipe, brought to you by Everyday Food
- 4 cups chopped rhubarb
- 1 apple, cored, chopped
- 1 red onion, chopped
- 1 cup mixed dried fruit
- 1 cup sugar
- 1/2 cup sultanas
- 1 tbsp coriander seeds
- 2 cups cider vinegar
- In a saucepan, combine rhubarb apple, onion, fruit, sugar, sultanas and coriander seeds. Stir in vinegar.
- Bring to boil, stirring. Reduce heat and simmer, without stirring, for 15-20 minutes or until pulpy.
- Reduce heat to very low, and cook for 30 minutes or until the mixture is very thick and pulpy.
- Spoon into clean jars, seal, label and store for a few weeks before serving.
