To serve these delectable prawn skewers at a party, wrap the end of each skewer with a mini-napkin after they come off the barbecue, it'll prevent burnt fingers when your guests snap them up.

Ingredients

Prawn skewers with lime and green onions

  • 1.5 kg medium uncooked prawns
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 2 cloves garlic, crushed
  • 12 green onions
  • 2 limes, extra
  • bamboo skewers, soaked

Steps

Prawn skewers with lime and green onions

  1. Peel and devein the prawns, leaving the tails intact.
  2. In a large bowl, combine prawns, juice, oil and garlic. Cover and refrigerate for 1 hour.
  3. Cut onions into 4cm lengths. Thread 3 prawns onto each skewer, placing a piece of onion between each prawn.
  4. Cook skewers on a heated, oiled grill pan (or grill or barbecue) for 2-3 minutes, or until browned on both sides and just cooked through. Serve with lime wedges, if desired.
