Pesto beef burgers
Ingredients
Pesto beef burgers
- 500 g lean beef mince
- 1 small onion, finely chopped
- 1/2 cup grated parmesan, plus extra slices to serve
- 1/3 cup basil pesto, plus 1/2 cup extra to serve
- 1/3 cup mixed fresh herbs, (basil, parsley, chives) chopped
- 1 beaten egg
- 2 tbsp oil
- bread rolls, sliced tomato rocket leaves, to serve
Steps
Pesto beef burgers
- In a large bowl, combine mince, onion, parmesan, pesto, herbs and egg. Season to taste. Shape into 4 even-sized, flattened patties. Chill on tray for 5 minutes.
- Heat oil in a large frying pan on medium. Cook patties 4-5 minutes each side, until golden brown and cooked through. Drain on paper towel.
- To serve, spreads rolls or thickly sliced bread with half extra pesto. Top each with tomato, rocket, patty, extra cheese and remaining pesto.
