Pear and vanilla tarte tatin

  • 75 g butter
  • 1/3 cup (80g) brown sugar
  • 1 vanilla bean, split
  • 1 strip lemon zest
  • 4 firm pears, peeled, cored and cut into wedges
  • 375 g block puff pastry, thawed
  • ice-cream, to serve


Pear and vanilla tarte tatin

  1. Preheat the oven to 200°C, and grease and line the base of four 10cm pie tins with baking paper.
  2. Place the butter into a frypan over medium heat until melted. Add the brown sugar, vanilla and lemon and cook until the sugar has dissolved.
  3. Add the pears and simmer for 10 minutes or until they start to soften.
  4. Roll the pastry out on a floured surface until it is 2-3mm thick, then cut out four 14cm rounds.
  5. Arrange the pears in the tins, then top each one with a round of pastry, making sure to tuck the edges into the pie tin.
  6. Transfer to a tray and bake in the oven tor 20-25 minutes or until puffed and golden.
  7. Turn each tart out onto a serving plate and serve with ice-cream.
