Pasta salad, vegetables recipe, brought to you by Woman's Day


Pasta salad

  • 5 cups cooked spiral pasta
  • 250 g punnet cherry tomatoes, quartered
  • 1 red capsicum, seeded, chopped
  • 1/2 barbecued chicken, meat shredded
  • 1/2 cup roughly chopped parsley
  • 3 slices salami or prosciutto, cooked, chopped
  • 2 green onions, finely sliced


  • 1 tbsp olive oil
  • 2 tsp white wine vinegar
  • 1 tsp dijon mustard


Pasta salad

  1. In a large bowl, combine pasta, tomatoes, capsicum, chicken, parsley, salami and onions.
  2. In a jug, whisk all dressing ingredients together with a fork.
  3. Pour dressing over salad and season to taste. Toss well.
