Pasta alfredo

Cream and cheese tossed in fettucine create a delicious pasta alfredo.

Ingredients

  • 375 g packet fettucine
  • 60 g butter
  • 300 ml carton light cream
  • 1 1/2 cups grated parmesan cheese
  • 1/2 tsp ground nutmeg
  • mesclun, crusty bread, to serve

Steps

Pasta alfredo

  1. Cook pasta in a large saucepan of boiling salted water, according to packet instructions until al dente (just tender). Drain well.
  2. Melt butter in a large frying pan on high. Blend in cream and 1 1/4 cups of parmesan cheese. Heat, stirring, 3 minutes until mixture is bubbling.
  3. Toss sauce and nutmeg through and season to taste. Serve topped with remaining parmesan cheese. Serve with salad and crusty bread.
