Onion jam, onion recipe, brought to you by Australian Table
- 1 tbsp olive oil
- 4 onions, halved and sliced
- 1/4 cup kecap manis
- 1 tsp grated ginger
- 1 finely chopped chilli
- 1/4 cup brown sugar
- Heat 1 tablespoon olive oil in a large, heavy-based saucepan on medium. Add sliced onions, kecap manis, ginger, chilli and stir to combine.
- Cover and cook, stirring frequently, 5 minutes, until onions soften. Remove lid and cook, uncovered, for 20 minutes, until onions have caramelised. Stir through brown sugar during last 10 minutes of cooking. Cool before spooning into a jar.
