MIXED BEANS WITH ALMONDS

Laced with goodness, there's always reason to whip up this effortless and tasty accompaniment for any meal or occasion.

Ingredients

Mixed beans with almonds

  • 400 g green beans, trimmed
  • 1 1/2 cups frozen broad beans, skins removed
  • 2 tbsp olive oil
  • 2 garlic cloves, crushed
  • 1 lemon, finely grated zest
  • 1/4 cup slivered almonds, toasted

Steps

Mixed beans with almonds

  1. Preheat oven to moderately hot, 190°C. Bring a large saucepan of water to the boil. Add beans. Cook for 2-3 minutes until beans are tender but crisp and bright green. Drain well. Transfer to a bowl.
  2. Pour over combined oil, garlic and lemon zest. Season to taste and toss to combine.
  3. Serve sprinkled with almonds.
