Minted fruit salad

  • 375 g (1 punnet) strawberries, hulled and sliced
  • 2 ruby grapefruit, peeled and segmented
  • 4 slices slices fresh pineapple, cut into chunks
  • 1/4 cup fresh mint leaves
  • natural low-fat yoghurt, to serve


Minted fruit salad

  1. Place strawberries, grapefruit, pineapple and mint leaves in a large bowl. Toss well to combine and set aside for 10 minutes.
  2. Divide fruit among serving plates, drizzle with juices and top with yoghurt.
