Creamy mushroom pasta bake

  • 375 g penne
  • 40 g butter
  • 250 g button mushrooms, quartered
  • 1 clove garlic, crushed
  • 2 tbsp plain flour
  • 2 cups milk
  • 250 g leg ham, finely chopped
  • 1 cup grated tasty cheese
  • 2 green onions, thinly sliced


Creamy mushroom pasta bake

  1. Preheat oven to 180°C/160°C fan forced. Grease rectangular ovenproof dish. Cook pasta in plenty of boiling salted water for 10-12 minutes or until tender but firm to the bite. Drain: return to pan.
  2. Meanwhile, melt butter in a large frying pan over moderate heat until foaming. Add mushroom; cook and stir for 2 minutes or until tender. Add garlic: stir to combine. Sprinkle flour evenly over mushroom, then stir until mixture thickens. Gradually add milk, stirring. until mixture boils and thickens. Remove from heat. Stir in ham, half the cheese and onion until combined. Season with salt.
  3. Add mushroom mixture to pasta and stir until well combined. Spoon pasta mixture into prepared dish; sprinkle with remaining cheese. Bake for 10 minutes or until golden and bubbly. Serve at once.
