Lime and coconut ice-cream

  • 2 L vanilla ice-cream
  • 1/2 cup desiccated coconut
  • 2 limes, juice
  • 4 limes, finely grated zest
  • 1 tbsp coconut essence
  • extra lime zest, to serve


Lime and coconut ice-cream

  1. Remove ice-cream from the freezer and leave at room temperature to soften slightly.
  2. Spoon softened ice-cream into a large bowl. Gently fold through coconut, juice, zest and essence.
  3. Spoon back into an ice-cream container. Freeze overnight until firm. Serve scoops sprinkled with lime zest.
