Packed full of punch, this zesty lemon vinegarette is versatile enough to toss through any salad.
- 1 cup olive oil
- 4 lemons, juice and finely grated zest
- 2 tbsp dijon mustard
- 2 tbsp finely chopped chives
- 1 tbsp sugar
- In a jug, whisk together all ingredients. Season to taste.
- Pour into sterilised jars and seal.
