Leftover turkey and orange salad with green dressing

This Nici Wickes recipe sees leftover turkey combined with juicy oranges – warmed to bring back the sunshine in them – and tossed with a creamy green dressing to bring it all to life for a second sitting!
Ingredients
Leftover turkey and orange salad
- 2 tbsp olive oil
- 2 cups leftover turkey, torn or cut into bite-sized pieces
- leftover roasted root vegetables – cooked onions, plus peas, gravy etc
- 2-3 oranges, segmented
- 2-3 cups torn lettuce leaves, baby spinach or other salad greens
- small handful parsley
- green dressing, to serve (see recipe below)
Green dressing
- 1/4 cup parsley, chopped
- small handful mint, smacked
- 3 tbsp mayonnaise or plain unsweetened yoghurt
- 2 tbsp lemon juice
- 1/4 cup good-quality olive oil
- salt and pepper, to taste
Steps
Leftover turkey and orange salad
- In a pan, heat the oil and gently warm the turkey and any vegetables and gravy you have left over. If you only have turkey, that’s fine, but add ¼ cup liquid – such as orange juice, white wine or water, so the turkey heats as this simmers.
- Add the orange segments to the pan and cook until they are warmed through.
- Spread the salad greens on a large plate and spoon the turkey and orange over. Sprinkle with the parsley and drizzle with the green dressing (below). Serve immediately.
Green dressing
- Whizz all the ingredients in a food processor or blender and blend until smooth. Taste and season.
