Ingredients

Kumara, feta and mint wrap

  • 500 g kumara, peeled, thinly sliced
  • 200 g low-fat feta
  • 100 g light cream cheese
  • 4 slices wholemeal lavash bread
  • 1 small red onion, finely sliced
  • 1/2 cup shredded mint leaves

Steps

Kumara, feta and mint wrap

  1. Preheat oven to 200°C. Lightly grease a baking tray. Spread kumara slices out on prepared tray. Roast 10-15 minutes, until tender.
  2. In a bowl, mix feta and cream cheese until smooth. Season to taste.
  3. Spread feta mixture onto each piece of lavash. Scatter with onion and mint. Lay kumara slices on top. Roll up. Cut in half; serve.
