Kumara, feta and mint wrap
Ingredients
Kumara, feta and mint wrap
- 500 g kumara, peeled, thinly sliced
- 200 g low-fat feta
- 100 g light cream cheese
- 4 slices wholemeal lavash bread
- 1 small red onion, finely sliced
- 1/2 cup shredded mint leaves
Steps
Kumara, feta and mint wrap
- Preheat oven to 200°C. Lightly grease a baking tray. Spread kumara slices out on prepared tray. Roast 10-15 minutes, until tender.
- In a bowl, mix feta and cream cheese until smooth. Season to taste.
- Spread feta mixture onto each piece of lavash. Scatter with onion and mint. Lay kumara slices on top. Roll up. Cut in half; serve.
