Iced watermelon and ginger zinger punch
Punch doesn't get much better than this refreshing iced watermelon and ginger zinger! A must-try recipe for sharing with friends and family on a hot summer afternoon
- 90 g grated ginger
- 3 lemons, flesh and juice
- 3 limes, flesh and juice
- 1/2 cup caster sugar
- 1.5 kg watermelon flesh
- 4 cups ice
- orange slices
- mint sprigs
- Press grated ginger through a sieve to extract juice. Combine with flesh and juice of lemons, limes and caster sugar.
- Place on low heat, stirring, until sugar dissolves. Bring to the boil, then cool.
- Strain into a large punch bowl. Purée watermelon flesh in a blender. Pour into bowl with ice, orange slices and mint sprigs.
