Healthy turkey bolognese
Ingredients
Healthy turkey bolognese
- 2 tsp olive oil
- 1 chopped onion
- 1 clove garlic, crushed
- 500 g turkey mince
- 200 g mushrooms, chopped
- 1 carrot, peeled, finely chopped
- 1 zucchini, finely chopped
- 2 tbsp tomato paste
- 400 g can diced tomatoes
- 1 cup reduced-salt beef stock (or water)
- 500 g wholemeal or spelt penne pasta
- shaved parmesan, salad, to serve
Steps
Healthy turkey bolognese
- In a large frying pan, heat oil on high. Saute onion and garlic for 3-4 minutes until onion is tender.
- Increase heat to high. Brown mince for 5-6 minutes, breaking up lumps. Add vegetables and cook, stirring, for a further 2-3 minutes. Stir in paste and cook for 1 minute.
- Mix in combined tomatoes and stock. Bring to boil. Reduce heat to medium. Simmer for 15-20 minutes. Season to taste.
- Meanwhile, in a large saucepan of boiling water, cook pasta until al dente. Drain. Return to pan.
- Toss hot sauce through pasta in pan. Serve topped with shaved parmesan if liked. Accompany with salad.
