  • 1 cup (150g) icing sugar, sifted
  • 1 tbsp water
  • slivered pistachios, to decorate

Green tea and honey cakes

  • non-stick cooking spray
  • 100 g butter, softened
  • 1/2 cup (75g) caster sugar
  • 1/4 cup (90g) honey
  • 1 egg
  • 1 cup (145g) plain flour
  • 1/2 tsp baking powder
  • pinch of salt
  • 3 tsp green tea powder


Green tea and honey cakes

  1. Preheat the oven to 160°C and spray two 12-hole patty cake tins with non-stick cooking spray.
  2. Cream butter and sugar in electric mixer until pale, then add honey and egg, beating well to combine.
  3. Sift in flour, baking powder, salt and green tea powder and mix gently.
  4. Spoon the cake mixture into the prepared tins and cook for 20 minutes.
  5. Cool in tin for five minutes before turning out onto a cooling rack.
  6. To make the icing, place the icing sugar in a bowl and add enough water until a runny consistency is achieved.
  7. Drizzle the icing over the cooled cakes, then top with pistachio slivers.
  8. Serve with a pot of freshly-brewed green tea.
