Gingerbread Loaf

When time is limited, make your baking work for you. These recipes will take you from afternoon tea to dessert!

Ingredients

Gingerbread Loaf

  • 1 cup brown sugar
  • 1 cup milk
  • 150 g butter
  • 2 tbsp golden syrup
  • 2 tsp baking soda
  • 2 1/4 cups flour
  • 2 tsp ground ginger
  • 1 tsp allspice

Whipped maple butter

  • 100 g butter, softened
  • 1/4 cup maple syrup
  • 2/3 cup icing sugar

Steps

Gingerbread Loaf

  1. Preheat oven to 175ºC and line a 12cm x 22cm loaf pan.
  2. In a medium saucepan, melt together the brown sugar, milk, butter, golden syrup and baking soda, then remove from the heat and cool for 30 minutes.
  3. Stir flour and spices into cooled mixture until smooth. Pour into loaf pan and bake for 45-50 minutes until puffed and deep golden.
  4. Serve in slices with whipped maple butter.

Whipped maple butter

  1. Beat softened butter with maple syrup and icing sugar until pale and fluffy.
