Fragrant tomato ketchup

  • 2 kg ripe tomatoes, chopped
  • 500 g plums, quartered, pitted
  • 2 medium (300g) onions, chopped
  • 150 g pitted dates, chopped
  • 2 cups (440g) brown sugar
  • 2 tbsp pomegranate molasses
  • 1 tbsp sea salt flakes
  • 1/2 tsp fennel seeds
  • 1/2 tsp cumin seeds
  • 1 star anise
  • 1 cinnamon stick, broken in half
  • 1/4 tsp ground black pepper
  • 2 cups (500ml) malt vinegar


Fragrant tomato ketchup

  1. Place all ingredients in a large saucepan; bring to the boil. Adjust heat to a steady low boil; cook 2 hours, uncovered, stirring occasionally.
  2. Puree in a blender or food processor, then pour into hot sterilised bottles and seal.
