Falafel with parsley salad

  • 100 g falafel mix
  • 1/2 cup water
  • 4 spring onions, 1/2 finely chopped, 1/2 sliced lengthways
  • 1 large potato, peeled, grated
  • 1 cup chopped parsley
  • 3 ripe tomatoes, seeded, thinly sliced
  • 1/4 cup (60ml) olive oil
  • lemon wedges, to serve
  • natural yogurt, to serve


Falafel with parsley salad

  1. Combine falafel mix and water in a bowl. Add finely chopped onion, potato and half of parsley. Mix until combined. With wet hands, form into patties.
  2. In another bowl, combine sliced onion, remaining parsley and tomato. Season and toss with 1 tablespoon of oil.
  3. Heat remaining oil in a frying pan on medium. Fry falafel for 5 minutes, turning frequently, until golden all over. Serve with parsley salad, lemon wedges and yoghurt.
