Duck salad with orange and chilli

  • 1 chinese barbecued duck
  • 3 oranges, segmented
  • 1 small red onion, halved, sliced
  • 1 small lebanese cucumber, halved, seeded, sliced
  • 1/3 cup coriander leaves
  • 1/3 cup mint leaves
  • 1/4 wombok (chinese cabbage), finely shredded
  • 1/4 cup peanuts, toasted
  • 1 long red chilli, thinly sliced

Orange dressing

  • 1/3 cup orange juice
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tsp sesame oil


Duck salad with orange and chilli

  1. Remove meat from duck, leaving skin on; discard bones. Slice meat into small pieces.
  2. Place duck in a large bowl with remaining ingredients; toss well.
  3. To make orange dressing, in a small jug, whisk together all ingredients.
  4. Drizzle orange dressing over salad; toss well and serve.
