Curried pumpkin and coriander soup

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 garlic clove (optional)
  • 2 tsp red curry paste
  • 1.5 kg pumpkin, seeded peeled, chopped
  • 1 L vegetable stock
  • 2 cups water
  • coriander leaves, to serve


Curried pumpkin and coriander soup

  1. Heat oil in a stock pot on medium. Saute onion, garlic, if using, and curry paste for 3-4 minutes until onion is tender and mixture is aromatic. Add pumpkin, stock and water. Season to taste. Cook for 20-25 minutes until very tender.
  2. Using a hand blender or food processor, process mixture until pureed. Reheat on low and season to taste. Serve topped with coriander.
