Croissants with herby scrambled eggs and smoked salmon

For the perfect breakfast-in-bed, you can't go past this croissant recipe. Filled with herby scrambled eggs, smoked salmon and Dijonnaise, this recipe is a delicious way to show you care

Ingredients

  • 2 large croissants
  • 3 eggs
  • 2 tbsp cream
  • 1 tbsp chopped fresh chives
  • Dijonnaise mustard
  • 100 g sliced smoked salmon

Steps

  1. Preheat oven to 180°C.
  2. Cut croissants in half and place them on an oven tray. Bake for 5 minutes or until they are crisp.
  3. Whisk eggs, cream and chives in a bowl. Season with salt and pepper. Pour mixture into a heated, greased, nonstick frypan and stir gently over medium heat until egg is just set but still creamy.
  4. Spread a little Dijonnaise over base of croissants, then top with smoked salmon and scrambled egg.
