Croissants with herby scrambled eggs and smoked salmon

For the perfect breakfast-in-bed, you can't go past this croissant recipe. Filled with herby scrambled eggs, smoked salmon and Dijonnaise, this recipe is a delicious way to show you care
Ingredients
- 2 large croissants
- 3 eggs
- 2 tbsp cream
- 1 tbsp chopped fresh chives
- Dijonnaise mustard
- 100 g sliced smoked salmon
Steps
- Preheat oven to 180°C.
- Cut croissants in half and place them on an oven tray. Bake for 5 minutes or until they are crisp.
- Whisk eggs, cream and chives in a bowl. Season with salt and pepper. Pour mixture into a heated, greased, nonstick frypan and stir gently over medium heat until egg is just set but still creamy.
- Spread a little Dijonnaise over base of croissants, then top with smoked salmon and scrambled egg.
