Crispy parmesan chicken

  • 4 chicken breast fillets, cut into 3 diagonally
  • 1 cup (250g) natural yogurt
  • 2 cups (200g) dry or (140g) fresh breadcrumbs
  • 1/4 cup (20g) grated parmesan
  • 1/4 cup chopped parsley
  • olive oil spray
  • potato wedges, to serve


Crispy parmesan chicken

  1. Preheat oven to 180°C. Line a baking tray with foil.
  2. Brush chicken with yogurt, then dip in combined breadcrumbs, parmesan and parsley, pressing on firmly. Transfer to a plate and chill for 20 minutes.
  3. Arrange chicken on prepared tray. Spray with olive oil. Bake for 25-30 minutes, until chicken is cooked through and golden. Serve with potato wedges.
