Creamy broccoli, garlic and tuna pasta bake with rocket

This no-fuss pasta bake recipe creates the perfect family meal. Creamy, cheesy yet packed with plenty of green goodness, this dish is delicious served for dinner sprinkled with peppery rocket leaves
Ingredients
- 375 g penne pasta
- 2 heads broccoli, roughly chopped
- 6 eggs
- 600 ml cream
- 425 g can tuna in oil, drained
- 60 g baby spinach leaves
- 3 spring onions, sliced
- 2 garlic cloves, crushed
- 1/4 cup grated parmesan
- 60 g rocket leaves to serve
Steps
- Preheat oven to moderate, 180°C. Grease a 12-cup baking dish.
- In a large saucepan of boiling salted water, cook pasta following packet instructions, adding broccoli in the final 2 minutes. Drain.
- In a large bowl, whisk eggs and cream together. Add pasta, broccoli, tuna, spinach, onion and garlic, tossing to combine. Season to taste.
- Transfer mixture into prepared dish. Sprinkle with parmesan. Bake for 30-35 minutes until bubbling and golden. Serve with rocket.
