Ingredients

Corned beef dinner

  • 1 kg piece corned beef
  • 1 tbsp brown sugar
  • 1 tbsp vinegar
  • 5 whole cloves
  • 8 spring (salad) onions, trimmed, peeled
  • 8 chat potatoes, halved
  • 1 bunch baby carrots, trimmed, peeled
  • 1 cup (120g) frozen peas
  • parsley leaves, to serve

Steps

Corned beef dinner

  1. Rinse corned beef. In a large saucepan, place beef with sugar, vinegar and cloves. Add enough water to cover.
  2. Bring to boil. Reduce heat and simmer very gently, covered, for about 1 hour 20 minutes, until a skewer inserted into meat is easily removed. Remove corned beef from liquid and set aside. Strain stock and return to saucepan. Season to taste.
  3. Add onions and potato to stock and simmer for 10 minutes. Add carrots and peas and simmer for another 10 minutes, until vegetables are tender.
  4. Divide vegetables between serving bowls. Top with sliced corned beef and ladle over a little stock. Scatter with parsley and serve.
