Christmas Eton mess
This is an easy dessert to put together using up any leftover Christmas cake or pudding, fresh fruit that’s ready to be eaten and meringues. Plus, it’s super-yum!
- 400 ml whipped cream
- 2 cups roughly crumbed christmas cake or pudding
- 2 cups meringue pieces
- 2 cups raspberries or cut strawberries and any other summer fruit that needs using up (we used some pawpaw for a tropical feel)
- small handful mint leaves
- In a large bowl, gently fold everything, except the mint leaves, together. Either serve in individual pretty glasses or bowls, or let everyone help themselves from a large bowl. Garnish with fresh mint leaves.
