Chocolate fudge cake with a buttercream frosting, served with whipped cream and strawberries


Chocolate fudge cake

  • 200 g dark chocolate, chopped
  • 200 g softened butter
  • 1 cup brown sugar
  • 3 eggs, room temperature
  • 1 1/2 cups plain flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1/2 cup buttermilk
  • whipped cream, strawberries, to serve


  • 2 cups icing sugar
  • 1/3 cup cocoa
  • 20 g melted butter
  • 1/4 cup milk


Chocolate fudge cake

  1. Preheat oven to moderate, 180°C. Lightly grease and line a 20cm round cake pan with baking paper.
  2. Place chocolate in a heatproof bowl over a saucepan of simmering water. Stir with a metal spoon 4-5 minutes until melted and smooth. Cool 5 minutes.
  3. In a large bowl, using an electric mixer, beat butter and sugar together until pale and creamy. Add eggs, one at a time, beating well after each addition. Add chocolate and beat well.
  4. Fold sifted combined flour, cocoa powder, baking powder and soda into mixture alternately with buttermilk, until just combined. Spoon into pan and smooth surface.
  5. Bake 40-45 minutes until cooked when tested with a skewer. Cool in pan 5 minutes before turning out onto a wire rack to cool completely.
  6. To make icing, sift combined icing sugar and cocoa together into a large bowl. Stir in butter and enough milk to make a smooth, spreadable consistency. Spread over the top and sides of cooled cake. Serve with whipped cream and strawberries.
