Choc Banana Muffins

The unbeatable combination of chocolate and banana is celebrated in these delicious muffins, which are packed full of real chocolate chips. These are great to make with the kids as a weekend treat or lunchbox snack.

Ingredients

  • 2 cups self-raising flour
  • 1/4 cup cocoa powder
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup milk
  • 1 egg
  • 60 g butter, melted
  • 3/4 cup mashed overripe banana
  • 1/2 cup dark chocolate chips
  • 1/2 cup white chocolate chips
  • 12 dried banana chips, to decorate

Steps

Choc banana muffins

  1. Preheat oven to 180°C (160°C fan-forced). Line a 12-hole (1/3-cup) muffin tray with paper cases.
  2. Sift flour and cocoa into a medium bowl. Stir in sugar. Make a well at centre.
  3. Whisk milk, egg, butter and banana in a jug; add to flour mixture. Add chocolate chips; stir until just combined (do not over mix).
  4. Spoon mixture into prepared holes. Top each with a banana chip to decorate. Bake 20 minutes, or until a skewer inserted at centre comes out clean.
