Chilli beef salad

  • 2 green onions, cut into matchsticks
  • 1 tbsp vegetable or peanut oil
  • 1/2 small red onion, finely chopped
  • 300 g lean beef mince
  • 1 clove garlic, crushed
  • 2 tbsp soy sauce
  • 2 tbsp sesame seeds, toasted
  • 1/2 small carrot, cut into matchsticks
  • 100 g red cabbage, core removed, shredded
  • 2 tbsp lemon or lime juice
  • 1 tbsp sweet chilli sauce, plus extra, to serve
  • 1 fresh long red chilli, thinly sliced
  • 1/3 cup chopped coriander
  • 1/2 small iceberg lettuce, cut in half crosswise

Steps

Chilli beef salad

  1. Place green onion in a small bowl of iced water. Stand for 10-15 minutes or until curled. Drain.
  2. Heat oil in a wok or large frying pan over moderate heat. Add red onion; cook and stir for 2-3 minutes or until softened slightly. Add mince; cook, stirring with a wooden spoon to break up lumps, for 2-3 minutes or until browned. Add garlic and soy sauce. Remove from heat. Stir in sesame seeds.
  3. Combine carrot, cabbage, juice, chilli sauce, chilli, coriander and mince mixture in a large bowl. Place lettuce on serving plates. Top with mince mixture. Top with green onion. Serve with extra sweet chilli sauce.
