Chilli beef and cashew stir-fry

This beef stir-fry recipe is so easy to whip up - slices of steak are stir-fried with veges and cashews and served with noodles and chilli jam
Ingredients
Chilli beef & cashew stir-fry
- 1/3 cup cashews
- 1 tbsp vegetable oil
- 500 g beef fillet, sliced or beef stir-fry strips
- 450 g bag fresh stir-fry vegetable mix
- 200 g thick rice noodles, sliced, blanched
- 200 g tub chilli jam
- 2 spring onions, shredded
Steps
Chilli beef & cashew stir-fry
- Heat a wok or large frying pan on high. Add cashews and toss for 1-2 minutes until golden. Transfer to a plate.
- In same wok, heat oil on high. Stir-fry beef in 2 batches for 3-4 minutes each until sealed and browned. Transfer to a bowl.
- Add vegetable mix to wokand stir-fry for 2-3 minutes.
- Return beef to wok with noodles and chilli jam. Stir-fry for 2-3 minutes until hot. Serve sprinkled with spring onions and cashews.
