Chicken with Tzatziki

Chicken with tzatziki

  • 500 g greek-style yoghurt
  • 1 tbsp lemon thyme leaves
  • 2 tsp paprika
  • 1 tsp chilli flakes
  • 1 tbsp olive oil
  • 6 chicken breast fillets, trimmed
  • 1 clove garlic (small), crushed
  • 1/4 cup chopped mint
  • 2 green onions (shallots), finely chopped
  • rocket, grilled truss tomatoes, to serve


Chicken with tzatziki

  1. Line a sieve with paper towel. Strain yoghurt, stand over sieve for 30 minutes.
  2. Preheat barbecue on high. In a large bowl, combine lemon thyme, paprika, chilli flakes and oil. Season to taste. Add chicken and turn to coat.
  3. Combine yoghurt, garlic, mint and green onion in a bowl. Season to taste.
  4. Cook chicken breasts for 4 minutes each side, until browned and cooked through. Serve with tzatziki, rocket and tomatoes.
