Chicken stroganoff with pasta

Rich and delicious, homemade chicken stroganoff is no-fail family favourite. It's easy to whip up and, served with pasta, it's guaranteed to fill tummies and please the tastebuds.
Ingredients
Chicken stroganoff with pasta
- 50 g butter
- 375 g portobello mushrooms, sliced
- 1 onion, chopped
- 1 clove garlic, crushed
- 2 tbsp tomato paste
- 4 chicken thigh fillets, trimmed, sliced
- 1 1/2 cups chicken stock
- 1/2 cup sour cream
- cooked pasta, parsley leaves, to serve
Steps
Chicken stroganoff with pasta
- In a large frying pan, melt butter on medium heat. Saute mushroom, onion and garlic for 5-6 minutes, or until tender. Add tomato paste and cook, stirring, 2-3 minutes.
- Mix in chicken and stock. Cook on medium heat for 5-10 minutes, stirring, or until chicken is cooked through and liquid is reduced by half.
- Stir sour cream through and simmer for 1-2 minutes, or until heated through. Season to taste. Serve with pasta and sprinkle with parsley.
