Chewy apricot and coconut granola bars

These wonderfully chewy apricot and coconut granola bars are packed with all sorts of goodness! Try this fantastic recipe for kids' lunchboxes or enjoy for a tasty morning or afternoon tea treat
Ingredients
Chewy apricot and coconut granola bars
- 1/2 cup brown sugar, firmly packed
- 1/4 cup honey
- 125 g butter
- 2 tbsp peanut butter
- 3 cups oats
- 1 cup puffed rice
- 3/4 cup chopped dried apricots
- 3/4 cup desiccated coconut
- 1/4 cup sunflower seeds
Drizzle
- 1/3 cup icing sugar
- 2 tsp Greek-style yoghurt
- 1/2 tsp vanilla extract
Steps
- Preheat the oven to 180°C. Line a 28cm x 18cm slice pan with baking paper.
- Combine the sugar, honey, butter and peanut butter in a saucepan over a medium heat. Cook, stirring at times until the mixture comes to the boil. Allow to boil for 2 minutes before removing the pan from the heat.
- Combine the remaining ingredients in a large bowl, pour in the syrup and mix well.
- Press the mixture firmly into the lined slice pan; it will be sticky so use wet hands or a sheet of baking paper to press with.
- Bake for 15-20 minutes until golden brown.
- To make the drizzle, mix together the icing sugar, yoghurt and vanilla in a small bowl. Lightly flick the drizzle over the cooled slice.
- Once the drizzle has set, cut into 14 bars (about 9cm x 2cm).
