Cheesy veggie pasta bake
Ingredients
Cheesy veggie pasta bake
- 350 g elbow pasta or macaroni
- 60 g butter
- 1/3 cup plain flour
- 3 cups milk
- 1 1/2 cups frozen peas, corn and carrot mix
- 2 cups pizza cheese
Steps
Cheesy veggie pasta bake
- Cook pasta in large saucepan of boiling salted water according to packet instructions. Drain well and set aside.
- Meanwhile, melt butter in medium saucepan on high. Stir in flour. Cook, stirring, 1 minute. Remove from heat.
- Gradually stir in milk until smooth. Return to heat and cook, stirring, 1- 2 minutes, until mixture boils and thickens.
- Reduce heat to low, simmer 3 minutes. Fold in pasta, veggies and 1 cup of cheese. Season to taste.
- Preheat grill to hot. Pour mixture into 4 x 1 cup ramekins. Sprinkle with remaining cheese.
- Grill, 8-10 minutes, until cheese is melted and golden.
