Cheesy gnocchi bake with bacon and broccoli

Ingredients
- 500 g gnocchi
- 1 head broccoli, florets and stalks cut into 1cm pieces
- 10 g butter
- 1 red onion, thinly sliced
- 1 garlic clove, finely chopped
- 2 tsp lemon thyme leaves, plus sprigs to serve
- 1/2 cup cream
- 150 g mozzarella, finely chopped
- 6 rindless bacon rashers, torn
Steps
- In a large saucepan of boiling salted water, cook gnocchi and broccoli for 2 minutes or until all pieces float on the surface and are just tender. Drain well.
- In a large, flameproof baking dish, melt butter on medium. Sauté onion, garlic and thyme for 4 minutes. Stir in cream. Preheat grill to high.
- Toss gnocchi and broccoli through cream mixture. Season to taste. Arrange mozzarella and bacon on top of dish. Grill for 5 minutes until broccoli is cooked and bacon is crispy.
