Cauliflower and ham pasta bake

With the combination of cheese, cauliflower and ham, this pasta bake recipe is a winning family dinner. Plus, it freezes well too
Ingredients
- 500 g penne pasta
- 1 cauliflower, trimmed, cut into florets
- 300 g tub sour cream
- 1 cup thickened cream
- 1 cup tasty cheese
- 1/2 cup chopped parsley to serve
Topping
- 3 cups fresh breadcrumbs
- 150 g ham, finely chopped
- 1/2 cup grated parmesan
- 1 tbsp thyme leaves
Steps
- In a large saucepan of boiling salted water, cook pasta for 5 minutes. Add cauliflower to saucepan and cook for a further 5-7 minutes until pasta is tender.
- Drain, then transfer pasta and cauliflower to a 12-cup baking dish. Add combined sour cream, cream, cheese and parsley. Mix well and season to taste.
- For topping: In a bowl, mix all topping ingredients together. Sprinkle over pasta.
- Allow pasta to cool, cover with plastic wrap and freeze (see tip) or continue as directed in Step 5.
- Preheat oven to 200°C. Bake for 15-20 minutes until golden and bubbling.
