Cashew nut chutney

  • 3 tbsp plain yoghurt
  • 1 tsp ginger, chopped, peeled
  • 2.5 tbsp lime juice
  • 2 tbsp mint, chopped
  • 1/2 tsp salt
  • 1 cup unsalted cashew nuts
  • lime wedges, for serving


Cashew nut chutney

  1. Put yoghurt, ginger, 2 Tbsp lime juice, mint and salt in a blender and blend until smooth. With machine going, feed in the cashew nuts. Blend to a lumpy paste. Taste and add more lime juice if necessary and thin with more yoghurt or a little water.
  2. Transfer to a serving bowl, cover and chill until needed. Garnish with a lime wedge and serve.
