Calabrese pizza with fennel sausage and chilli

This deliciously spicy pizza from Liliana Battle's book, 'Easy Home Cooking Italian Style', is inspired by her family roots in Calabria where chilli and fennel are really common.

Ingredients

Calabrese pizza with fennel sausage and chilli

  • 1 tbsp olive oil
  • 2 italian-style fresh fennel and chilli sausages, meat removed from casing
  • 1/2 tsp ground fennel seed
  • 1/4 tsp chilli flakes
  • freshly cracked black pepper
  • 1 bought pizza base
  • 1/4 cup pureed canned tomatoes
  • 20 g roasted red capsicum, cut into strips
  • 1/4 tsp dried oregano
  • 1 cup grated mozzarella cheese

Steps

Calabrese pizza with fennel sausage and chilli

  1. Preheat oven to hottest setting.
  2. Heat the olive oil in a non stick frying pan, add the sausage meat and cook while squashing with the back of the spoon to separate the meat.
  3. Once meat is browned, add the fennel, chilli, and a good grind of black pepper. Remove from the pan and allow to cool slightly.
  4. Spread pizza base with sauce, leaving a 2cm border. Top evenly with cooked sausage meat, capsicum and sprinkle with oregano and cheese. Cook 5-10 minutes, or until the edges start to char and the pizza is bubbling hot.
  5. Remove, cut with a pizza cutter and eat immediately.
