Buttermilk Peach Cake

This cake is made in 5 minutes in your food processor – it’s that easy.

Ingredients

Buttermilk Peach Cake

  • 1 1/2 cups 1 1/2 flour
  • 2 tsp baking powder
  • 3/4 cup sugar
  • 1 tsp baking soda
  • 2 eggs
  • 125 g butter, softened
  • 1/2 cup buttermilk
  • 1 x 40g tin sliced peaches, drained

Streusel

  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 50 g hard butter
  • 1/2 cup walnuts

Steps

Buttermilk Peach Cake

  1. Preheat the oven to 160C on fan bake.
  2. Place flour, baking powder, sugar, baking soda, eggs, butter, and buttermilk in food processor. Pulse ingredients 3 times for 10 seconds each time.
  3. Place in a greased and lined 21cm cake tin. Top with the drained peaches.
  4. To make streusel mix, place all ingredients in your food processor and pulse until crumbly.
  5. Top the peaches with the streusel mix.
  6. Bake for 1 hour. Ovens do vary, so it may need a little more cooking time.
