Butterflied spiced lamb

  • 1 lemon, juiced
  • 2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp ground cardamom
  • 1/2 tsp ground turmeric
  • 1 leg of lamb, butterflied
  • 1/2 cup (140g) natural yogurt
  • lime wedges and mango chutney (optional), to serve


Butterflied spiced lamb

  1. Combine juice and spices. Rub into lamb. Spread lamb with yogurt. Place in a shallow dish, cover with plastic wrap and marinate for 1-2 hours.
  2. Preheat a barbecue on high. Cook lamb for 20 minutes each side, basting frequently, until cooked to your liking.
  3. Cover lamb with foil and rest for 10 minutes. Carve lamb thickly across grain. Serve with lime and mango chutney, if desired.
