Beetroot relish

Beetroot relish

This sweet homemade beetroot relish is beautiful served with grilled meats, or heaped on top of a burger for another level of flavour.

Ingredients

Beetroot relish

  • 1 onion, chopped
  • 1/2 cup water
  • 1/3 cup brown sugar
  • 1/4 cup red wine vinegar
  • 1 pinch ground cinnamon
  • 1 pinch cloves
  • 450 g can whole baby beets, drained, chopped
  • 1/4 cup sultanas
  • 2 tbsp chopped parsley

Steps

Beetroot relish

  1. Combine onion, water, sugar, vinegar, cinnamon and cloves in a large saucepan. Cook on medium heat 4-5 minutes, until onion is tender.
  2. Add beetroot and sultanas. Simmer 15-20 minutes, until thickened slightly. Stir parsley through. Allow to cool. Serve.
