This sweet homemade beetroot relish is beautiful served with grilled meats, or heaped on top of a burger for another level of flavour.
- 1 onion, chopped
- 1/2 cup water
- 1/3 cup brown sugar
- 1/4 cup red wine vinegar
- 1 pinch ground cinnamon
- 1 pinch cloves
- 450 g can whole baby beets, drained, chopped
- 1/4 cup sultanas
- 2 tbsp chopped parsley
- Combine onion, water, sugar, vinegar, cinnamon and cloves in a large saucepan. Cook on medium heat 4-5 minutes, until onion is tender.
- Add beetroot and sultanas. Simmer 15-20 minutes, until thickened slightly. Stir parsley through. Allow to cool. Serve.
