Beef mince and rice burritos

Filled with fantastic flavour, this delicious beef mince and rice burrito recipe is great topped with sour cream, guacamole and salsa and served for an easy family meal
Ingredients
- 250 g packet microwave white rice
- 1 tbsp olive oil
- 1 red capsicum, seeded, finely diced
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 500 g beef mince
- 35 g packet taco seasoning mix
- 400 g can diced tomatoes
- 1/2 cup water
- 125 g can corn kernels, drained
- 12 mini tortillas
- 1 cup grated tasty cheese
- 1 large avocado, flesh scooped
- juice of 1 lemon
- sour cream, salsa, coriander sprigs to serve
Steps
- Preheat oven to moderate, 180°C. Lightly grease a large baking dish. Cook the rice following packet instructions and cool.
- In a large frying pan, heat oil on medium. Sauté capsicum, onion and garlic for 4-5 minutes until tender. Add mince, then cook, stirring, for 4-5 minutes until browned.
- Sprinkle over seasoning and cook for 1 minute. Add tomatoes and water to pan, then bring mixture to the boil. Simmer for 4-5 minutes until mixture thickens. Stir in corn and rice. Season.
- Divide mince mixture between tortillas and roll upto enclose filling. Place into dish and sprinkle with cheese. Bake for 15-20 minutes until cheese is melted and golden.
- In a medium bowl, mash avocado and 2 teaspoons lemon juice.
- Serve burritos topped with sour cream, guacamole, salsa and coriander sprigs.
