Ingredients
Basil pesto potato salad
- 1 kg baby new potatoes, unpeeled, quartered
- 1/2 cup (150g) mayonnaise
- 2 green onions, sliced thinly
- 1/4 cup finely sliced fresh basil
- 2 tsp finely grated lemon zest
Basil pesto
- 1/2 cup firmly packed fresh basil leaves
- 1/4 cup (20g) coarsely grated parmesan cheese
- 2 tbsp roasted pine nuts
- 1 clove garlic, quartered
Steps
Basil pesto potato salad
- Boil, steam or microwave potato until tender; drain.
- Meanwhile, make basil pesto.
- Combine mayonnaise and pesto in large bowl; add onions and hot potato, mix gently.
- Serve salad topped with combined basil and zest.

- Process basil, cheese, nuts and garlic until chopped finely. With motor operating, gradually add oil in a thin, steady stream; process until almost smooth.
