- 3/4 cup soy milk
- 1 large ripe banana, mashed, plus 1 extra, sliced
- 1 tbsp maple syrup
- 1 tsp vanilla essence
- 1 cup plain flour
- 1 tsp baking powder
- cooking oil spray
- strawberry jam, to serve
- Whisk milk, mashed banana, maple syrup and essence in a medium bowl. Sift flour and baking powder over mixture; mix with a fork until combined.
- Lightly spray a large non-stick frying pan with oil, then place over moderate heat. Cook heaped tablespoons of batter, in batches, for 2-3 minutes each side or until golden and cooked. Serve with extra banana and jam.
